Description

Ingredients

  • 2 pounds chicken thighs, boneless and skinless
  • 4 cups low‑sodium chicken broth
  • 3 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup frozen peas

Instructions

  1. In the slow cooker, combine the chicken, broth, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
  2. Stir to mix everything evenly.
  3. Cover and cook on low for 6-8 hours, or until chicken is tender.
  4. Shred the chicken with two forks and return it to the stew.
  5. Stir in the frozen peas and let it cook for another 10 minutes before serving.
